Konjac, Amorphophallus konjac, is a perennial herbaceous plant from the Araceae family. It develops from a spherical tuberous rhizome that can weigh 3 to 4 kg and reach 25 cm in diameter.
Konjac grows naturally in the forests of Asia (Japan, Thailand, Vietnam, South Korea and Southern China) where it is cultivated as a vegetable. Although widespread in several Asian countries, konjac is mainly consumed and cooked in Japan for the preparation of drinks and various pastes.
The main component of the konjac tuber is glucomannan, a polysaccharide and high molecular weight dietary fiber. Water-soluble, glucomannan swells and forms a gel in the stomach when absorbed.
